Now I know my title isn't the most appetizing title but bare with me because my goal is to make it as easy as possible to make healthy eating, easy and delicious.

Meatless Monday: Barbecued Tofu 
So Simple to make you’ll be making it every day of the week.
Ingredients
1lb firm tofu, frozen and defrosted
2 large onions, thinly sliced
1 cup low-fat barbecue sauce
Directions
Preheat the oven to 375F.
Squeeze any excess water from the tofu. Slice the block of tofu across its short end into 1/4-inch slices. Place the onions in a baking dish and pour 1/4 cup barbecue sauce over them.
Add the tofu and the remaining barbecue sauce. Let the tofu and sauce marinate in the refrigerator for about 30 minutes. Bake the tofu and onions for 20 to 30 minutes, until the sauce is bubbling hot.
The tofu can also be cooked on the grill, brushing frequently with barbecue sauce.
