Now I know my title isn't the most appetizing title but bare with me because my goal is to make it as easy as possible to make healthy eating, easy and delicious.

Lime and Ginger Grilled salmon
Ingredients
- 1/4 cup lime juice
- 1 teaspoon freshly grated lime rind
- 2 teaspoons reduced-sodium vegetable broth
- 1 teaspoon fresh minced ginger
- 1 jalapeno pepper, seeded and finely minced
- 2 (6oz) salmon steaks
Directions
- whisk together lime rind, lime juice, oil, ginger, and jalapeno. Set aside a teaspoon of mixture.
- Place salmon steaks in a dish large enough to hold them. pour remaining juice over salmon and turn to coat. Marinate at room temperature for 15 minutes, turning once.
- Preheat grill to medium high and grease. Grill salmon turning once, until cooked through about 3 to 4 minutes on each side. move to platter and pour remaining lime mixture on top. Serve immediately.
